Dads Beer Batter
- 2 cups Dry Pancake Mix
- 1/2 packages (about 4 Oz. Stack) Saltine Crackers, Crushed
- 2 whole Eggs
- 1 teaspoon Sugar
- 1 teaspoon Salt
- 16 ounces, fluid Beer (I Use Miller Genuine Draft Because That's What Dad Does, But Feel Free To Use Your Favorite)
- 1 quart Oil, For Frying
- Mix all ingredients together well (except oil) and refrigerate for 2 hours before using.
- Lightly coat whatever you are frying in flour before battering.
- Fry at 360 degrees F for just a minute or two or until golden brown.
- Enjoy!
