A To Z Veggie Casserole / Wisatefair2001 Recipe

• 3 Tbsp. butter
• 1 sm red onion
• 1 lb carrots shredded
• 2 ounce dry apricots sliced thinly
• 2 c. chicken broth
• 1/2 c. sweet cooking sherry salt and pepper
• 1 Tbsp. orange marmalade
• 6 ounce semolina alphabet macaroni
• 1 c. fresh blanched peas

1. Saute/fry onion and butter in a large skillet.
2. Add in carrots and apricots.
3. Continue to saute/fry for 5 min.
4. Add in chicken broth and marmalade and simmer 2 min; add in peas and set mix aside.
5. Cook alphabet macaroni al dente (3 to 5 min).
6. Rinse in cool water, add in to vegetable mix, and simmer 5 min.
7. Add in salt and pepper to taste.
8. Serve warm or possibly cool.
