Cheesy Biscuit Bean 'n Beef Casserole
- 1 (10 1/4 ounce) can refrigerated buttermilk biscuits (Pillsbury Grands Homestyle)
- 12 lb lean ground beef (at least 80%)
- 1 medium onion, chopped (1/2 cup)
- 1 (28 ounce) canbaked beans with bacon and brown sugar, undrained
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 7/8 ounce) can great northern beans, drained and rinsed
- 12 cup barbecue sauce
- 12 cup finely shredded cheddar cheese (2 oz.)
- Preheat oven to 350; spray an 11 x 7 inch glass baking dish with cooking spray.
- Separate biscuits; cut each biscuit into 6 pieces; set aside.
- In a large nonstick skillet, cook beef and onion over med-high heat 5-7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
- Stir in beans and barbecue sauce; heat to boiling, stirring occasionally.
- Pour hot mixture into baking dish; immediately top with biscuit pieces; sprinkle with cheese.
- Bake 18-20 minutes or until biscuits are golden brown and baked through.
