Potatoes And Tomatoes With Fresh Coconut
- 5 medium-sized potatoes (about 1 1/4 lb.)
- 4 Tbsp. vegetable oil
- 6 cloves garlic, peeled and finely chopped
- 1 whole dried hot red pepper
- 1 tsp. whole cumin
- 2 tsp. ground cumin
- 5 oz. grated coconut
- 1/2 tsp. ground turmeric
- 1 1/4 lb. fresh tomatoes, peeled and diced into 1/2-inch pieces or 16 to 20 oz. tin Italian tomatoes
- 2 tsp. salt and sugar
- 1 tsp. red wine vinegar
- Peel potatoes, then dice into 3/4-inch pieces and put into bowl of cold water.
- Heat oil in heavy 3-quart pot over medium-high flame.
- When hot, add finely chopped garlic.
- Stir about 5 seconds before adding red pepper and cumin seed.
- Stir for another 3 seconds.
- Garlic should brown lightly, red pepper should darken and cumin seed should sizzle.
- Lower heat to medium.
- Add grated coconut and stir for 10 to 15 seconds.
