Avocado Grapefruit Salad With Sour Cream Honey Dressing Recipe
- 3 x Pink grapefruits chilled
- 3 med Ripe avocados halved, seeded, and peeled
- 3/4 c. Lowfat sour cream Juice of 2 large limes
- 3 Tbsp. Honey
- 1/2 tsp Salt
- 1/4 tsp Freshly-grnd black pepper Mint leaves for garnish
- Slice ends off grapefruits and stand upright on a counter or possibly tabletop.
- Cut away skin and membrane, exposing fruit.
- Working over a bowl to catch the juice, separate sections by slicing with a serrated knife between membranes.
- Remove and throw away the seeds.
- Slice avocado halves lengthwise in 1/2-inch slices.
- Arrange alternating grapefruit sections and avocados slices on 6 salad plates.
- Whisk together lowfat sour cream, lime juice, honey, salt, and pepper in a small bowl.
- Just before serving, spoon about 2 Tbsp.
- dressing in a stripe over each salad.
- Garnish with mint leaves and serve.
- This recipe yields 6 servings.
- Variations: Toss chunks of avocado and supremes of grapefruit with salt, pepper, and extra virgin olive oil.
