Avocado Grapefruit Salad With Sour Cream Honey Dressing Recipe

  1. Slice ends off grapefruits and stand upright on a counter or possibly tabletop.
  2. Cut away skin and membrane, exposing fruit.
  3. Working over a bowl to catch the juice, separate sections by slicing with a serrated knife between membranes.
  4. Remove and throw away the seeds.
  5. Slice avocado halves lengthwise in 1/2-inch slices.
  6. Arrange alternating grapefruit sections and avocados slices on 6 salad plates.
  7. Whisk together lowfat sour cream, lime juice, honey, salt, and pepper in a small bowl.
  8. Just before serving, spoon about 2 Tbsp.
  9. dressing in a stripe over each salad.
  10. Garnish with mint leaves and serve.
  11. This recipe yields 6 servings.
