Ice Cream-Cookie Wiches

• 24 Chunks Ahoy! Cookies
• 3 cups chocolate ice cream, slightly softened
• 3/4 cup flaked coconut, toasted

1. Top each of 12 cookies with 1/4 cup ice cream; cover with remaining cookies to make 12 sandwiches.
2. Roll edges in coconut.
3. Freeze 1 to 2 hours or until firm.
