Gingered Pea Pods With Soy-Flavored Butter
- 3 teaspoons safflower oil
- 1 12 inches piece fresh ginger, peeled and cut into thin julienne
- 1 lb snow peas, strings removed
- 1 tablespoon soy sauce
- 1 tablespoon well-chilled unsalted butter, cut into small pieces
- Heat 1 1/2 teaspoons oil in wok or heavy large skillet over medium-high heat.
- Add ginger and stir-fry until light golden brown, about 1 minute; remove from wok.
- Add remaining oil to wok and heat until hot.
- Add snow peas and stir-fry until almost crisp-tender, about 3 minutes.
- Return ginger to wok and stir-fry until heated through, about 30 seconds.
- Transfer vegetables to serving platter.
- Add soy sauce to wok; immediately add butter and whisk until smooth, about 30 seconds.
- Pour over snow peas, toss well and serve.
