Southern Pimento Cheese

  1. Make sure all the ingredients are well chilled.
  2. Shred the Velveeta cheese and shred the cheddar cheese.
  3. Add half of the sharp cheddar cheese to a bowl and then add half of the Velveeta cheese.
  4. Mix well, then add the remaining cheese in the same order.
  5. By adding half of each at a time, it helps it mix together better.
  6. Add pimentos and juiceI use about half of the pimento juice.
  7. Add the mayonnaise and mix well.
  8. If the pimento cheese is too thick, you can add more juice or a bit more mayonnaise.
  9. If it is too thin, add more cheese.
  10. Mine was perfect with the above measurements.
  11. Let chill and serve on crackers, celery or make finger sandwiches.
