Basque Saffron Rice Recipe

  1. Heat oven to 350.
  2. Using an oven-proof casserole which also can be used on a burner, heat oil over medium-high heat.
  3. Add in onion and rice.
  4. Saute/fry 5 min.
  5. Add in chicken broth and saffron.
  6. Bring to a boil, cover and place in the oven for 15 min.
  7. Remove from the oven and add in salt and pepper to taste.

  11. NOTES : Pilaf, sometimes called pilau, is a rice dish which begins with first sauteing rice and then cooking it in broth.
  12. This can be done in the oven or possibly on a burner.
