Basque Saffron Rice Recipe
- 1 tsp extra virgin olive oil
- 1/4 c. sliced yellow onion
- 1/2 c. long-grain white rice
- 1 c. nonfat low-salt chicken broth
- 1/8 tsp saffron threads salt and pepper
- Heat oven to 350.
- Using an oven-proof casserole which also can be used on a burner, heat oil over medium-high heat.
- Add in onion and rice.
- Saute/fry 5 min.
- Add in chicken broth and saffron.
- Bring to a boil, cover and place in the oven for 15 min.
- Remove from the oven and add in salt and pepper to taste.

- NOTES : Pilaf, sometimes called pilau, is a rice dish which begins with first sauteing rice and then cooking it in broth.
- This can be done in the oven or possibly on a burner.
