Sweet Potato and Bacon Salad
- 1 sweet potato
- 2 rashers of bacon
- 1 handful of salad
- 2 tbsp mayonnaise
- 1 tbsp peanut butter
- 1 tsp dijon mustard
- 1/2 tsp soy sauce
- Chop sweet potato into fat chip-shaped chunks and place in a saucepan of water to bring to the boil.
- Simmer the sweet potato for around 8 minutes or until soft
- Shallow fry the bacon in its own fat in a small frying pan (I don't even put any oil in the pan; it just cooks itself!)
- Meanwhile, combine the mayo, peanut butter, mustard and soy sauce in a small bowl and set aside
- Once cooked, drain the excess fat from the bacon on a paper towel, then add it and and the sweet potato chips into the sauce mixture and mix well
- Serve with plenty of salad - something like rocket or baby leaf spinach goes best, I've found
