Sweet Potato and Bacon Salad

  1. Chop sweet potato into fat chip-shaped chunks and place in a saucepan of water to bring to the boil.
  2. Simmer the sweet potato for around 8 minutes or until soft
  3. Shallow fry the bacon in its own fat in a small frying pan (I don't even put any oil in the pan; it just cooks itself!)
  4. Meanwhile, combine the mayo, peanut butter, mustard and soy sauce in a small bowl and set aside
  5. Once cooked, drain the excess fat from the bacon on a paper towel, then add it and and the sweet potato chips into the sauce mixture and mix well
  6. Serve with plenty of salad - something like rocket or baby leaf spinach goes best, I've found
