Mother's Squash Casserole Recipe
- 6 med. yellow squash, sliced
- 1 sm. onion, chopped
- 1 teaspoon salt
- 1 egg, well beaten
- 1/2 c. lowfat milk
- 1 c. cream of mushroom soup
- 2 tbsp. butter
- 1 c. grated cheese
- 1 c. cracker crumbs
- Cook squash in small amount of water in covered container till tender.
- Drain.
- Mix all ingredients, reserving a small amount of cheese and cracker crumbs for top.
- Place in greased baking dish.
- Sprinkle with reserved cracker crumbs and cheese.
- Bake in 350 degree oven about 30 min or possibly till slightly brown on top.
