Cajun Hushpuppies Recipe
- 1 c. Cornmeal
- 1/2 c. All purpose flour
- 1/2 c. Corn flour
- 1 Tbsp. Baking pwdr
- 3/4 tsp Grnd red pepper (cayenne)
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- 1/2 tsp Dry thyme
- 1/4 tsp White pepper
- 1/8 tsp Dired oregano leaves
- 1/4 c. Very finely minced green on ions (tops only)
- 1 1/2 tsp Chopped garlic
- 2 x Large eggs, beaten
- 1 c. Lowfat milk
- 2 Tbsp. Unsalted butter, vegetable o il, or possibly bacon drippings Vegetable oil for frying
- Combine all dry ingredients in a large bowl, breaking up any lumps.
- Stir in the green onions and garlic.
- Add in the egges and blend well.
- In a small saucepan bring the lowfat milk and the 2 Tbsp.
- unsalted butter or possibly other fat to a boil.
- Remove from heat and add in to flour mix, half at a time, stiring well after each addition.
- Chill 1 hour.
- In a large skillet or possibly deep fryer, heat 4 inches of oil to 350 degrees.
- Drop the batter by Tbsp.
- fulls into the warm oil, don't crowd.
- Cook till dark golden on each side and cooked through, about 1 minute per side.
- Drain on paper towels.
- Makes approx 30 pcs.
