Cajun Hushpuppies Recipe

  1. Combine all dry ingredients in a large bowl, breaking up any lumps.
  2. Stir in the green onions and garlic.
  3. Add in the egges and blend well.
  4. In a small saucepan bring the lowfat milk and the 2 Tbsp.
  5. unsalted butter or possibly other fat to a boil.
  6. Remove from heat and add in to flour mix, half at a time, stiring well after each addition.
  7. Chill 1 hour.
  8. In a large skillet or possibly deep fryer, heat 4 inches of oil to 350 degrees.
  9. Drop the batter by Tbsp.
  10. fulls into the warm oil, don't crowd.
  11. Cook till dark golden on each side and cooked through, about 1 minute per side.
  12. Drain on paper towels.
  13. Makes approx 30 pcs.
