Roasted Winter Veg With Goats Cheese

  1. Heat oven to 200C.
  2. Place cut vegetables into roasting pan, pour over 4 tbsp oil.
  3. Roast for 60 minutes.
  4. Make dressing by whisking together last 3 ingredients.
  5. When vegetables are cooked put them into big serving bowl.
  6. Toss through spinach and goats cheese.
  7. Season to taste.
  8. Serve either hot or at room temperature.
