Roasted Vegetable Medley

  1. Dice vegetables.
  2. Mix salt, pepper, olive oil, and vegetables.
  3. Arrange on non-stick baking sheet or sheet sprayed with olive oil.
  4. Bake for 20 minutes at 420 degrees.
