Roasted Vegetable Medley
- 2 yellow zucchini
- 2 eggplants
- 2 green zucchini
- 12 red pepper
- 1 small onion
- 12 teaspoon salt
- 12 teaspoon black pepper
- 1 teaspoon olive oil
- Dice vegetables.
- Mix salt, pepper, olive oil, and vegetables.
- Arrange on non-stick baking sheet or sheet sprayed with olive oil.
- Bake for 20 minutes at 420 degrees.
