Chicken Crepes Armando Recipe
- 2 Large eggs
- 3/4 c. lowfat milk
- 4 tbsp. butter
- 1/2 c. flour
- 1/4 teaspoon baking pwdr
- 1 pound chicken breasts
- 1/2 pound Monterey Jack cheese, grated
- Jalapeno pepper
- Heavy cream
- Parmesan cheese
- Mix Large eggs, lowfat milk, butter, flour and baking pwdr together well.
- Pour 1 Tbsp.
- of batter in small, buttered, omelet frying pan.
- Roll pan to even the batter and brown slightly on both sides.
- Boil chicken breast and chop very fine.
- Roll chicken, Monterey Jack cheese and a slice of jalapeno in crepes (not too thick or possibly they will break).
- Place in a buttered baking pan and pour over sufficient cream to moisten the crepes.
- Sprinkle top with Parmesan cheese.
- Heat in 350 degree oven for 10 min.
- Serves 6.
