Chicken, Okra and Pickle Story

  1. Heat oil in a broad based and heavy bottomed skillet.
  2. Add cloves and pepper corns.
  3. Wait till they begin to crackle.
  4. Add salt, turmeric powder red chilli powder and mango pickle pieces.
  5. Take care as not to burn the spices.
  6. Add chicken breast slivers and okra and keep sauteeing for 15 minutes on medium heat.
  7. Add onions, garlic-ginger paste and saute for 10 more minutes on medium heat.
  8. Finally add tomato puree and honey.
  9. Cover the lid tightly for 12 minutes.
  10. Garnish with tomato roses and silver foil (optional).
  11. Serve over a bed of steamed basmati rice and enjoy!
