Easy Broiled Eggplant Parmesean
- 1 whole Eggplant
- 1 Tablespoon Extra Virgin Olive Oil
- 2 Tablespoons Tomato Sauce, Any Variety (it's Great With Spicy Kind)
- 2 Tablespoons Ricotta Cheese
- 2 Tablespoons Shredded Mozzarella Cheese
- 1 teaspoon Parmesan Cheese, Divided
- 1 Tablespoon Shredded Basil
- Preheat the broiler and set the rack to about 6 inches from the heat.
- Cut the eggplant in half lengthwise and brush both sides with olive oil.
- Place on a broiler pan and broil, 5-7 minutes each side
- Once the eggplant is done, move the rack up so its closer to the broiler.
- On each eggplant slice, place 1 tablespoon of tomato sauce, 1 tablespoon ricotta, 1 tablespoon shredded mozzarella, 1/2 teaspoon parmesan cheese.
- Place under the broiler again and heat until the cheese is melted, about 3-4 minutes.
- Sprinkle with the basil.
