Easy Broiled Eggplant Parmesean

  1. Preheat the broiler and set the rack to about 6 inches from the heat.
  2. Cut the eggplant in half lengthwise and brush both sides with olive oil.
  3. Place on a broiler pan and broil, 5-7 minutes each side
  4. Once the eggplant is done, move the rack up so its closer to the broiler.
  5. On each eggplant slice, place 1 tablespoon of tomato sauce, 1 tablespoon ricotta, 1 tablespoon shredded mozzarella, 1/2 teaspoon parmesan cheese.
  6. Place under the broiler again and heat until the cheese is melted, about 3-4 minutes.
  7. Sprinkle with the basil.
