Grilled Zucchini with Goat Cheese and Mint

  1. Brush zucchini halves with olive oil and grill the cut sides until golden, about 5 minutes.
  2. Turn and sprinkle each with 1 tablespoon goat cheese.
  3. Grill until the cheese is melted and zucchini are tender.
  4. Sprinkle with fresh mint and season to taste with salt and pepper.
