Grilled Zucchini with Goat Cheese and Mint
- 4 medium zucchini
- 4 tbsp. soft goat cheese
- 2 tbsp. fresh mint
- salt and pepper
- Brush zucchini halves with olive oil and grill the cut sides until golden, about 5 minutes.
- Turn and sprinkle each with 1 tablespoon goat cheese.
- Grill until the cheese is melted and zucchini are tender.
- Sprinkle with fresh mint and season to taste with salt and pepper.
