Potato Cakes Recipe
- Instant mashed potato puffs, 4 servings
- 1/3 c. shredded cheddar cheese
- 1/4 c. plus 2 tbsp. cracker crumbs
- 1 egg, slightly beaten
- 2 tbsp. snipped parsley
- 1 teaspoon finely minced onion
- 1/2 teaspoon fine herbs (thyme, oregano, sage, rosemary, marjoram, and basil)
- 1/4 teaspoon salt
- 1 tbsp. vegetable oil
- Prepare potato as directed on package.
- Cold.
- Mix potatoes, cheese, crumbs, egg, parsley, onion, fine herbs and salt.
- Heat oil in 10 inch skillet.
- Drop potato mix by rounded tablespoonfuls into skillets.
- Flatten with spatula and fry over medium heat till light brown, about 3 min on each side.
- Drain.
- 6 to 8 servings.
