Crispy Fish And Chips With Free Tartare

  1. Place the potato wedges in a baking dish, coat with canola spray and bake in moderately hot oven 200C for 30 40 minutes, until cooked and golden, turning once during cooking.
  2. Dust the fish fillets with flour , shake off the excess, coat in egg white and toss through the combined cornflake crumbs and garlic powder.
  3. Spray a fry pan with canola spray and fry the fillets until cooked and golden.
  4. Combine the mayonnaise, yoghurt, gherkin, capers, parsley and lemon.
  5. Place the fillets on serving plates, with the crunchy wedges, a dollop of tartare and a wedge of lemon.
  6. Serve immediately.
