Greek -Style Bean Burgers

  1. Heat 1 tablespoons oil in a medium, nonstick skillet over medium heat.
  2. Add onion and garlic.
  3. Cook, stirring often, until tender, about 5 minutes.
  4. Cool slightly.
  5. In a food processor, combine onion mixture, beans, salt and pepper.
  6. Pulse until mixture is finely chopped and combined but not smooth.
  7. Transfer to a bowl.
  8. Add breadcrumbs and egg; mix until well combined.
  9. Form into 4 equal-size patties.
  10. Heat remaining oil in a grill pan or foil-lined grill over medium heat.
  11. Grill patties until golden and firm, about 6 minutes per side.
  12. Serve patties on grilled whole-wheat pitas and top with tzatziki.
  13. Garnish with tomato, onion and cucumber.
