Mustard-Pecan Coated Chicken
- 2-1/4 cups GREY POUPON Classic Dijon Mustard
- 1/2 cup sugar
- 1/2 cup lemon juice
- 1 Tbsp. ground cumin
- 3 cups finely chopped pecans
- 1-1/2 qt. medium cracker meal
- 48 each boneless skinless chicken breasts
- 1-1/2 cups oil
- Mix mustard, sugar, lemon juice and cumin in large bowl.
- Combine pecans and cracker meal in large shallow pan.
- Brush chicken with mustard mixture, then add to cracker mixture, turning to evenly coat both sides of chicken with the cracker mixture.
- Heat oil in large skillet on medium-high heat.
- Add chicken; cook 4 to 5 minutes on each side or until cooked through.
