Tomato Avocado Salad with Lime Vinaigrette
- 3 whole Avocados, Diced
- 1 can Black Beans
- 1 can Sweet Corn
- 1 carton Cherry Tomatoes
- 1/4 cups Red Onion, Diced Finely
- 2 Tablespoons Fresh Cilantro, Chopped
- 1/4 bottles Your Favorite Balsamic Vinaigrette Dressing
- Combine all ingredients.
- (You can change onion, dressing, and cilantro amounts to taste.)
- Store in fridge at least four hours before serving to allow flavors to meld.
- Can be used as a side dish or as a salsa served with chips, if diced finely.
- (Choose avocados that are almost purple but still have a little green on the skin.)
