Apricot Glazed Carrots Recipe

  1. Cook baby carrots and 1 tsp.
  2. salt in boiling water to cover in a large saucepan 15 to 20 min or possibly till carrots are tender; drain.
  3. Heat butter in saucepan; stir in preserves till blended.
  4. Stir in remaining 1/4 tsp.
  5. salt, nutmeg, orange rind, and orange juice; cook 5 min.
  6. Add in carrots; gently toss to coat.
  7. This recipe yields 4 servings.
