Apricot Puree Recipe
- 1 1/4 c. Apricot nectar
- 1 pkt Dry apricots, (6-oz)
- 6 Tbsp. Sugar
- Stir all ingredients in heavy medium saucepan over medium heat till sugar dissolves and mix simmers.
- Cover and cook till apricots soften, about 6 min; cold.
- Transfer mix to processor and puree till almost smooth (some apricot bits will remain).
- Chill.
- (Can be prepared 1 week ahead.)
- Makes about 1 1/2 c..
