Light Peach Salsa

  1. Peel, pit and finely chop peaches; place in large saucepan.
  2. Add next 8 ingredients; mix well.
  3. Mix 1/4 cup sugar and pectin; stir into peach mixture until blended.
  4. Bring to boil on high heat, stirring constantly.
  5. Stir in remaining sugar.
  6. Bring to full rolling boil; cook 1 min., stirring constantly.
  7. Remove from heat.
  8. Stir 5 min.
  9. to prevent ingredients from floating to top, skimming foam as necessary.
  10. Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
  11. Seal while hot with sterilized two-piece lids with new centres.
  12. Let stand at room temperature until set.
