Banana Pudding Bites with Dark Chocolate and Sea Salt
- 1/2 cups Creamy Peanut Butter
- 13 cups Honey
- 13 cups Coconut Oil
- 1 box 3 Ounce Box, Banana Pudding Mix
- 5- 1/2 cups Rice Krispies (I Used Gluten Free)
- 1 cup Old Fashioned Oats
- 1- 1/4 cup Dark Chocolate Chips
- 1 teaspoon Sea Salt
- Combine peanut butter, honey, and coconut oil in a large saucepan over medium heat until coconut oil is melted.
- Stir in the pudding mix and whisk until well incorporated.
- Turn off the burner and remove pan from heat.
- Add the cereal and oats and stir until mixture is coated evenly.
- Shape mixture into bite-sized balls.
- You will need to squeeze the mixture tightly for the shape to hold.
- Set the balls aside on a sheet of wax paper.
- Microwave chocolate chips in a small glass bowl for about 45 seconds at 50% power, continuing with additional 45 second bursts until chocolate is melted.
- Stir in between cooking times as needed.
- Dip each ball into the melted chocolate, set on the wax paper and sprinkle with sea salt.
- Keep balls in an airtight container in the fridge.
