Boursin & Bacon Pork Chops
- 4 whole Thick Cut Pork Chops
- 8 slices Maple Smoked Bacon
- 1/2 packages (5 Oz. Package) Herb And Garlic Boursin Cheese
- 4 slices Peach
- Preheat oven to 375 degrees.
- 1.
- Take a sharp knife at an angle and cut a pocket into the pork chop.
- Lay the pork chop on two pieces of bacon.
- 2.
- Take approximately 1 tablespoon of boursin cheese and tuck it down into the pork chop.
- 3.
- You can use a fresh peach, or sliced canned peaches in natural juice.
- If you use canned peaches, drain them in a colander (I used canned).
- Now take one slice of the peach and fit it in on top of the cheese in the pork chop pocket.
- Dont over stuff it; you should be able to close up the pork chop easily.

- Take the two pieces of bacon and wrap them tightly around the chop.
- You will need to use a toothpick to secure the bacon.
- 5.
- Now heat a non-stick fry pan to medium/high heat.
- Put the pork chops in the pan for 2 minutes on each side.
- You want to get the bacon browning.

- Place chops on a baking sheet and place in a 375-degree oven for 25-30 minutes.
- Take out and let rest for 5 minutes.
- Remove toothpicks before serving.
- You could very easily make these chops ahead of time if you are entertaining.
- I served them with wild rice and roasted Brussels sprouts.
