Boursin & Bacon Pork Chops

  1. Preheat oven to 375 degrees.

  3. Take a sharp knife at an angle and cut a pocket into the pork chop.
  4. Lay the pork chop on two pieces of bacon.
  5. 2.
  6. Take approximately 1 tablespoon of boursin cheese and tuck it down into the pork chop.
  7. 3.
  8. You can use a fresh peach, or sliced canned peaches in natural juice.
  9. If you use canned peaches, drain them in a colander (I used canned).
  10. Now take one slice of the peach and fit it in on top of the cheese in the pork chop pocket.
  11. Dont over stuff it; you should be able to close up the pork chop easily.

  13. Take the two pieces of bacon and wrap them tightly around the chop.
  14. You will need to use a toothpick to secure the bacon.
  15. 5.
  16. Now heat a non-stick fry pan to medium/high heat.
  17. Put the pork chops in the pan for 2 minutes on each side.
  18. You want to get the bacon browning.

  20. Place chops on a baking sheet and place in a 375-degree oven for 25-30 minutes.
  21. Take out and let rest for 5 minutes.
  22. Remove toothpicks before serving.
  23. You could very easily make these chops ahead of time if you are entertaining.
  24. I served them with wild rice and roasted Brussels sprouts.
