Chinese-style Chicken and Cucumber Salad

  1. Cut the cucumber into thin long pieces.
  2. Sprinkle with salt, leave for 15 minutes then wash and drain.
  3. Sprinkle the chicken with sake, salt and pepper and steam or microwave to cook.
  4. When it has cooled, cut it into thin long pieces in the same way you just cut the cucumber.
  5. Mix the chicken and the cucumber.
  6. Toss with the seasonings (add sesame oil last).
  7. Done.
