Pina Colada Cake Recipe
- 2 c. sugar
- 1 c. butter, softened
- 4 Large eggs
- 1 c. unsweetened pineapple juice
- 1/2 c. cream of coconut
- 1 teaspoon coconut extract
- 1 tbsp. rum extract
- 3 c. flour
- 3 teaspoon baking pwdr
- 1 teaspoon salt
- In a mixing bowl, cream sugar and butter well.
- Add in Large eggs, one at a time, blending well after each addition.
- In separate bowl, combine pineapple juice, cream of coconut, coconut extract and rum extract.
- Combine flour, baking pwdr and salt together.
- Add in pineapple juice mix to sugar and egg mix alternating with dry ingredients.
- Mix well and pour into 2 greased and floured 9-inch pans.
- Bake at 350 degrees for 35 min.
- Cold 15 min.
- Remove from pan and refrigerateon rack.
