Pina Colada Cake Recipe

  1. In a mixing bowl, cream sugar and butter well.
  2. Add in Large eggs, one at a time, blending well after each addition.
  3. In separate bowl, combine pineapple juice, cream of coconut, coconut extract and rum extract.
  4. Combine flour, baking pwdr and salt together.
  5. Add in pineapple juice mix to sugar and egg mix alternating with dry ingredients.
  6. Mix well and pour into 2 greased and floured 9-inch pans.
  7. Bake at 350 degrees for 35 min.
  8. Cold 15 min.
  9. Remove from pan and refrigerateon rack.
