Mexi-Corn Lasagna by Dei Fratelli
- 1 lb ground beef
- 1 (14 1/2 ounce) can corn, drained
- 1 (14 1/2 ounce) can chopped tomatoes, Dei Fratelli Mexican Tomatoes
- 1 cup picante sauce
- 1 tablespoon chili powder
- 1 12 teaspoons ground cumin
- 16 ounces low fat cottage cheese
- 2 eggs, slightly beaten
- 14 cup grated parmesan cheese
- 1 teaspoon oregano
- 12 teaspoon garlic salt
- 12 tortillas
- 14 cup shredded cheddar cheese
- Preheat oven to 375F.
- Brown meat, drain.
- Add corn, picante sauce, Dei Fratelli Chopped Mexican Tomatoes, chili powder and cumin.
- Simmer, stirring frequently for 5 minutes.
- Combine cottage cheese, oregano & garlic salt.
- Arrange 6 tortillas in a lightly greased 13x9x2 pan overlapping as necessary.
- Top with meat mixture.
- Spread cheese mixture.
- Arrange tortillas.
- Repeat layers until all mixtures are used.
- Bake for 30 minutes.
