Apple Spice Bread Recipe
- 2 2/3 c. Flour
- 1 1/2 tsp Baking soda
- 1 tsp Salt
- 2 tsp Cinnamon
- 1 tsp Grnd cloves
- 2 c. Sugar
- 1 c. Oil
- 4 x Large eggs, beaten
- 2 tsp Vanilla
- 4 c. Coarsely minced apples (1 c. minced apricots may be substituted for 1 c. apples)
- 1 c. Raisins
- 1 c. Minced pecans
- 1 tsp Sugar Pecan halves
- Preheat oven to 325 .
- Mix first 5 ingredients together.
- Mix sugar and oil in a large bowl.
- Add in Large eggs and vanilla, then stir in apples, raisins and pecans.
- Add in flour mix and mix well.
- Grease pans and line bottom with waxed paper.
- Pour batter into pan and smooth top.
- Bake for 50 to 60 min.
- After 20 min, pull out rack and sprinkle tops with 1 tsp.
- sugar and press in nut halves.
- Return and finish baking.
- Cold 10 min before turning out on rack.
- Freezes well.
- Yield: 2 (5 c.) pans or possibly 3 smallpans.
