Mexican Shells Recipe
- 18-20 jumbo pasta shells
- 1 pound hamburger
- 1 sm. can Durkee onions
- 1 can refried beans
- 1 med. size jar salsa, desired spiciness
- 2 c. shredded cheddar cheese
- Boil shells per directions on box, rinse with water; drain and set aside.
- Cover bottom of large casserole dish with small amount of salsa.
- In skillet brown hamburger and drain.
- To hamburger add in remaining salsa, refried beans, 1/2 can onions, 1 c. cheese.
- Stir together.
- Consistency should be thick sufficient to stay in shells.
- Stuff shells, place in casserole.
- Cover with remaining onions and cheese.
- Bake, covered at 350 degrees for 30 min or possibly till cheese melts.
- Serve with lowfat sour cream and taco chips.
