Golden Ambrosia Sweet Potato Salad
- 3/4 cup KRAFT Real Mayo Mayonnaise
- 1/2 cup KRAFT Creamy Poppyseed Dressing
- 1-1/2 tsp. grated gingerroot
- 2 lb. sweet potatoes (about 4), peeled, cubed, cooked and cooled
- 1 can (15 oz.) pineapple tidbits, drained
- 1 can (11 oz.) mandarin oranges, drained
- 1/2 cup dried cranberries
- 1 cup BAKER'S ANGEL FLAKE Coconut
- 1/2 cup chopped PLANTERS Pecans, toasted
- Mix mayo, dressing and ginger until blended.
- Combine potatoes, fruit and coconut in large bowl.
- Add mayo mixture; toss to coat.
- Refrigerate several hours or until chilled.
- Sprinkle with nuts before serving.
