German Bread Dumplings

  1. Preheat the oven to 275F (140C).
  2. Cut the rolls into small cubes.
  3. Spread on a baking sheet.
  4. Bake about 30 minutes, until crisp.
  5. Heat the oil in a frying pan over medium heat.
  6. Add the bacon and onion and cook about 7 minutes.
  7. Stir in the herbs and let cool.
  8. Beat the milk and egg together in a bowl.
  9. Add the bread cubes and bacon mixture and stir well.
  10. The dough should be firm enough to shape into dumplings; if it is too soft, stir in flour as needed.
  11. Bring a large saucepan of water to a boil over high heat.
  12. With damp hands, form the dough into 8 dumplings.
  13. Add the dumplings to the water and cook about 10 minutes, or until cooked through.
  14. Drain carefully and serve hot.
