Christmas Tree Spice Cookies

  1. In a bowl, cream the butter and sugar together until very light in color.
  2. Add the egg and honey and continue beating til mixture is light and fluffy.
  3. Sift the flour, baking powder, salt, ginger, and cinnamon together and stir into the butter-sugar mixture.
  4. Wrap the dough in wax or foil and freeze in the freezer for 1/2 an hour.
  5. Preheat the oven to 375F.
  6. Roll out the chilled dough until it is about 1/4-inch thick and cut it with a christmas tree shaped cookie cutter, or if you want them circular, use a glass.
  7. Place the cookies onto a lightly greased baking sheet and bake for about 12 minutes, or until they are golden.
