Sea Bass with Oriental Sauce

  1. Heat oil in heavy large nonstick skillet over high heat.
  2. Add fish and cook until cooked through, turning once, about 4 minutes per side.
  3. Transfer to plates using slotted spatula.
  4. Add ginger and garlic to same skillet and saute over high heat 30 seconds.
  5. Remove from heat.
  6. Add soy and vinegar and stir to combine.
  7. Mix in cilantro.
  8. Mix in sesame oil if desired.
  9. Spoon over fish and serve.
