Beef Tenderloin With Horseradish Recipe
- 2 1/2 lb Beef tenderloin
- 1 Tbsp. Cajun seasoning
- 1 Tbsp. Extra virgin olive oil
- 2 Tbsp. Dijon mustard
- 1 1/2 c. Fresh horseradish - peeled, grated
- 2 tsp Chopped garlic
- 1/2 tsp Salt
- 1/2 tsp Black pepper
- Directions: Trim the tenderloin of excess fat.
- Rub the Cajun seasoning and extra virgin olive oil onto the tenderloin.
- Heat a large saute/fry pan till very warm.
- Brown the tenderloin on all sides for approximately 2 min.
- Place the browned meat onto a roasting rack inside a shallow baking pan.
- Rub the top and sides of the meat with the Dijon mustard.
- In a small bowl, combine the horseradish, garlic, salt, and pepper.
- Press the mix onto the top and sides of the meat, over the mustard.
- Roast the tenderloin, uncovered, at 400 degrees for 35 min for medium rare.
- Let the roast rest for 5 min before slicing.
