Irvixen's Chewy Butterfinger Cookies
- 3/4 cup Butter, softened
- 1 cup Brown sugar
- 1 cup Sugar
- 1 Egg
- 2 tsp Vanilla extract
- 2 tsp Cornstarch
- 2 cup All purpose flour
- 1 tsp Baking soda
- 1/2 tsp Salt
- 10 oz Butterfinger candy bars
- Preheat oven to 350F.
- Cream butter with brown sugar and sugar.
- Mix in egg and vanilla.
- Mix flour, cornstarch, baking soda and salt until thoroughly combined.
- Mix into butter/sugar mixture.
- Drop by rounded tablespoon on to parchment paper lined baking sheets.
- Flatten cookies with hand, lightly press bits of remaining butterfinger on top.
- Bake for 8 minutes max.
- Let cookies firm up a bit on the sheet before transferring to cooling racks.
- Crush or finely chop 8 oz of butterfinger candies, fold in about 8 oz to the cookie dough.
- Makes about 3 dozen cookies.
