Irvixen's Chewy Butterfinger Cookies

  1. Preheat oven to 350F.
  2. Cream butter with brown sugar and sugar.
  3. Mix in egg and vanilla.
  4. Mix flour, cornstarch, baking soda and salt until thoroughly combined.
  5. Mix into butter/sugar mixture.
  6. Drop by rounded tablespoon on to parchment paper lined baking sheets.
  7. Flatten cookies with hand, lightly press bits of remaining butterfinger on top.
  8. Bake for 8 minutes max.
  9. Let cookies firm up a bit on the sheet before transferring to cooling racks.
  10. Crush or finely chop 8 oz of butterfinger candies, fold in about 8 oz to the cookie dough.
  11. Makes about 3 dozen cookies.
