Coconut Macaroons

  1. Pre heat oven to 170 and line a baking tray with greaseproof paper
  2. Beat egg whites until frothy
  3. Add cream of tartar and beat until soft peaks form
  4. Add the sugar 1 teaspoon at a time and whisk until shiny and it holds its shape
  5. Fold in the almonds, salt, vanilla extract & coconut till sticky but holds its shape when clumped together
  6. Divide in 8 large or like me 12 (for less calories ) & form into domes 6-7 cm.
  7. Place on tray but do t flatten.
  8. Cook for 20 minutes until they turn golden brown in parts, then take out and cool for bit before removing.
  9. Optional dip the base in melted chocolate if not dieting or diabetic
  10. Enjoy
