Coconut Macaroons
- 2 large egg whites or 3 small
- 1/4 tsp cream of tartar
- 10 grams diabetic sweetner or 100g caster sugar I used sweetner
- 30 grams ground almonds or blend own dry blanched almonds for about 1 minute
- pinch sea salt
- 1 tsp vanilla extract
- 250 grams shredded coconut I used fresh coconut and put in blender to shred. make sure it's dry, this can be frozen too
- Pre heat oven to 170 and line a baking tray with greaseproof paper
- Beat egg whites until frothy
- Add cream of tartar and beat until soft peaks form
- Add the sugar 1 teaspoon at a time and whisk until shiny and it holds its shape
- Fold in the almonds, salt, vanilla extract & coconut till sticky but holds its shape when clumped together
- Divide in 8 large or like me 12 (for less calories ) & form into domes 6-7 cm.
- Place on tray but do t flatten.
- Cook for 20 minutes until they turn golden brown in parts, then take out and cool for bit before removing.
- Optional dip the base in melted chocolate if not dieting or diabetic
