Apple and Cinnamon Muffins
- 1/2 or more Apple
- 1/2 tsp Salt
- 1 tsp Cinnamon
- 50 grams Margarine (butter, or cake margarine)
- 50 grams Sugar
- 1 medium Egg
- 50 ml Milk
- 100 grams Cake flour
- 1 tsp Baking powder
- Slice the apple into wedges, place in a heatproof dish, then microwave for about 2 minutes at 600 W without wrapping in plastic wrap.
- Stir in the salt and cinnamon.
- Microwave the margarine for 20 seconds at 600 W to soften, stir in the sugar, mix in the egg until smooth, then add the milk and mix again.
- Combine the sifted ingredients and add to the wet ingredients from Step 2, folding gently with a spatula.
- Once mixed, add the apples from Step 1, then stir until smooth.
- Fill the muffin tray with muffin cases or cups, pour in the batter evenly, then bake for 23 to 25 minutes in an oven preheated to 180C.
- This is how they turned out after baking for 23 minutes.
- It might be better to continue baking them for the full 25 minutes.
- They're really moist and delicious.
