Chicken Lime Enchiladas
- 4 Tortillas
- 1 1/2 Chicken Breast
- 1 cup Monterey Jack Cheese
- 1/4 cup Butter
- 3 tbsp Corn Starch
- 1 1/2 cup Chicken Broth
- 6 oz Sour Cream
- 1 Juice of Lime
- 5 Fresh Ground Pepper Cranks
- 2 tsp Cumin
- 1/4 cup Cilantro and Green Onion
- 1 Jalapeno Pepper
- Mix cheese and chicken together in a bowl.
- Roll chicken and cheese into tortillas and set on a baking dish.
- Melt butter in a pot.
- Next add corn starch and whisk until it thickens.
- Next add chicken broth to thin it out.
- Now add onion, jalapeno, cumin, lime juice, and pepper and sour cream.
- Drizzle over enchiladas.
- Top with more cheese.. Because why not?
- Bake for 25 minutes at 350F.
- Garnish with cilantro and green onion.
