Easy Chicken and Dumplings

- 1 lb boneless cooked chicken (or any chicken pieces)
- 4 cups chicken broth
- 1 (10 count) can biscuits
- 1 teaspoon poultry seasoning
- 1 teaspoon parsley
- salt and pepper
- Bring skinless chicken (breast and thigh meat pieces are best) to boil in 4 cups water.
- Add seasonings, cover and simmer until meat is white (approximately 1 hour).
- Remove chicken to platter to cool.
- (Strain broth; if chicken not boned.)
- Remove meat from bone and place into broth.
- Simmer on low while adding 1 inch torn pieces of biscuit dough into chicken and broth.
- After all dough is added, bring to boil, stirring constantly, then cover and place on low heat for 10-15 minutes or until thickened.
