Coconut Mousse

  1. Place butter and cream cheese in bowl.
  2. Beat at medium speed, scraping bowl often, until creamy.
  3. Add sugar; continue beating until well mixed.
  4. Beat at high speed, gradually adding whipping cream, until stiff peaks form.
  5. Gently stir in 1/2 cup coconut and coconut flavoring.
  6. Divide mixture evenly among 8 individual serving dishes.
  7. Cover; refrigerate until serving time.
  8. Sprinkle with toasted coconut, if desired.
