Apricot Carrot Bread Recipe
- 1 3/4 c. All purpose flour
- 1 tsp Baking pwdr
- 1/4 tsp Baking soda
- 1/4 tsp Salt
- 1/2 c. Granulated sugar
- 1/2 c. Apple Sauce
- 1/2 c. Shredded carrots
- 2 Tbsp. Vegetable oil
- 1/3 c. Dry apricots , cut
- 1/2 c. Powdered sugar
- 2 tsp Apple juice
- Preheat oven to 350*F. Spran an 8x4x2 inch pan with cooking spray.
- In large mixing bowl combine flour, baking pwdr, baking soda and salt.
- In a medium size bowl combine beaten egg, sugar, apple sauce, carrots, and vegetable oil.
- Add in all this at once to dry ingredients; stir just this once till just moistened (batter will be thick).
- Mix in apricots.
- Pour batter into prepared loaf pan and bak 45 to 60 min or possibly till a toothpick inserted comes out clean.
- Remove from oven and let cold.
- Wrap loaf and store overnight before slicing.
- POWDERED SUGAR ICING: In small bowl combine 1/2 c. sifted powdered sugar and 2 tsp apple juice to make drizzling consistency.
