Apricot Carrot Bread Recipe

  1. Preheat oven to 350*F. Spran an 8x4x2 inch pan with cooking spray.
  2. In large mixing bowl combine flour, baking pwdr, baking soda and salt.
  3. In a medium size bowl combine beaten egg, sugar, apple sauce, carrots, and vegetable oil.
  4. Add in all this at once to dry ingredients; stir just this once till just moistened (batter will be thick).
  5. Mix in apricots.
  6. Pour batter into prepared loaf pan and bak 45 to 60 min or possibly till a toothpick inserted comes out clean.
  7. Remove from oven and let cold.
  8. Wrap loaf and store overnight before slicing.
  9. POWDERED SUGAR ICING: In small bowl combine 1/2 c. sifted powdered sugar and 2 tsp apple juice to make drizzling consistency.
