Chocolate Ice-Cream Cake
- 370 g chocolate cake mix
- 2 cups cookies & cream ice cream, softened
- 2 eggs
- Preheat oven to 180.C or 160.C fan-forced.
- Grease & line a deep 20cm round cake pan.
- Using an electric mixer beat together cake mix, ice-cream & eggs for 1 min, scraping down the bowl.
- Beat on med for 3 mins, pour into pan & bake for 35-40 mins or until cooked through.
