Edamame With Asian Vinaigrette

  1. In a saucepan, bring water and salt to a boil over high heat.
  2. Add edamame and boil until soy beans are tender-crisp, about 6 minutes.
  3. Drain and transfer to a large bowl.
  4. Add shallots, soy sauce, vinegar, cilantro, ginger and sesame oil and toss to coat.
  5. Serve hot or cold.
