Hot Three Pepper Relish

  1. In a large saucepan, combine chopped peppers and vinegar.
  2. In a small bowl, mix pectin crystals with 1/4 cup of the sugar.
  3. Slowly stir pectin mixture into the peppers.
  4. Cook and stir over high heat until the mixture comes to a full boil.
  5. Stir in remaining sugar.
  6. Cook and stir until mixture returns to a boil.
  7. Continue to stir and boil hard for 1 minute.
  8. Skim off foam.
  9. Remove from heat.
  10. Stir and skim for 5 minutes to cool slightly.
  11. Pour quickly into sterilized jars.
  12. Seal while hot with new 2-piece lids or 18 inch hot parrafin.
  13. Makes about 5 cups.
