Campfire Apple Cider Stew Recipe
- 3 Tbsp. flour
- 2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp dry thyme
- 2 lb beef stew meat
- 3 Tbsp. extra virgin olive oil
- 2 c. fresh apple cider
- 1/2 c. water
- 2 Tbsp. cider vinegar
- 1 lrg bay leaf
- 4 x carrots, sliced
- 3 x potatoes, quartered, sliced
- 2 x onions, sliced
- 1 x celery stalk, sliced
- 1 x apple, sliced
- Combine flour, salt, pepper, and thyme in a bowl.
- Toss the stew beef into the flour mix.
- Brown with extra virgin olive oil in a Dutch oven.
- Stir in cider, water, and cider vinegar.
- Bring to a boil.
- Add in bay leaf.
- Simmer meat till tender.
- Add in balance of ingredients and cook till the vegetables are tender.
- Servings: 6
- Preparation Time: 2 hrs
- This can be a meal in itself.
- The beef can be precooked at home.
- You should finish the stew over a bed of coals on the campfire.
