Half-Fat Spiced Oatmeal-Nut Cookies
- 14 lb softened butter
- 12 cup brown sugar
- 14 cup granulated sugar
- 34 cup egg white
- 1 teaspoon vanilla
- 1 12 cups wheat flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 12 teaspoon ginger
- 12 teaspoon nutmeg
- 3 cups oats
- 14 cup chopped pecans
- Heat oven to 350 degrees F.
- Beat butter and sugar.
- Add egg whites and vanilla and mix well.
- Add flour, baking soda, and spices, and beat well.
- Stir in oats and pecans.
- Drop by rounded tablespoonful onto ungreased cookie sheet.
- Bake 10-12 minutes, up to 15 or 17 and they'll still be okay.
- Cool on wire rack.
